Technical Specifications
Soil : 60% Pyrenean gravel over a clayey subsoil, limestone shelf, 40% clayey limestone.
Varietals : 45% Merlot on clayey limestone plateau, 45% Cabernet Sauvignon and 10% Cabernet Franc on Pyrenean gravel.
Average age of the vines: over 25 years old
Harvesting Methods : 70% hand-picked and 30% mechanical.
Vinification :
Vats entirely thermo-regulated. Vinification by varietal and quality of the harvest. Traditional vinification: daily periodic pumping over of the tank volume. Controlled fermentation temperature between 26 and 28 degrees Celsius. Devatting on average 3 weeks after the start of alcoholic fermentation.
Ageing : 25% des lots ont passé 12 mois en barriques, le reste a été élevé en cuve.
Fining : Egg white is used.
Bottling : la totalité de la récolte est mise en bouteille au chateau.
Average annual production: env. 60000 bottles
